Grilled Summer Chicken Salad Bar

SHOP (Serves 6 to 8)
Chicken (2 pounds boneless/skinless breasts & thighs)
Mushrooms (3/4 pounds Fresh Cremini Mushrooms & 3/4 pounds Fresh Shitake, Stems removed, Halve the Caps 
Basil Pesto (1/3 cup
Vinaigrette:
Sugar (1 teaspoon)
Red Wine Vinegar (5 tablespoons)
Extra Virgin Olive Oil (3/4 cup)
Dijon Mustard (1 tablespoon)
Lemon (1 large for juicing)
Chives (1/4 cup finely chopped)
Garlic (2 small cloves)
Radish-Cucumber Salad:
Cucumber (4 Persian or 1 English seedless)
Parsley Leaves (1/2 cup)
Radishes (1 bunch)
Black Peppercorns (1 teaspoon)
Garlic Cloves (4 large smashed)
Sugar (2 tablespoons)
Kosher Salt (1/3 cup)
Chickpea Salad:
Chickpeas (1 15 oz can)
Red Onion (1/4 cup finely chopped)
Fresh Mint (1 tablespoon)
Green Bean Salad:
Green Beans (1 pound trimmed) & Almonds (1/2 cup chopped)
Fresh Tomato Salad:
Fresh Tomatoes (2 cut in wedges) Basil (1/4 cup thinly sliced)

•PREP (45 minutes)
Make vinaigrette by mixing all ingredients except oil and Chives. Whisk in Oil slowly and add Chives
(Vinaigrette can be made in advance but just add Chives before serving)
For Radish-Cumber salad make pickling bath by boiling 1 quart of Water, Salt, Sugar, Garlic and Peppercorns uncovered for ten minutes. Trim and halve Radishes. Halve Cucumber lengthwise and cut into 1/2 inch thick slices. Remove brine from heat add Cucumbers and Radishes to pickle for 10 mins.
For Chickpea Salad: Toss Chickpeas, Onions, Vinaigrette and S&P together, Then add Mint at the end
Quick blanch Green Beans in boiling salted water
Cook 2 to 3 minutes then into ice bath. Dry the Beans, dress with vinaigrette and top with Almonds
Brush Chicken with vinaigrette and season with S&P
Toss Mushrooms in vinaigrette & grill in basket or on skewers
Cut Chicken in strips or chunks
Toss Chicken and Mushrooms in Basil Pesto
Toss Tomatoes in vinaigrette and add Basil
Toss Lettuce lightly in vinaigrette

ACTION (15 minutes)
Arrange all ingredients on large platter for guests to help themselves like a salad bar so leave it deconstructed
DO NOT TOSS it all together. Drizzle more vinaigrette on top or serve it on the side
