Burrito Roll Ups

SHOP (Yields approximately 54 pinwheels)
1 package (6 sheets) Lavash Armenian Flat Bread)
1 can (30 oz) of Refried Beans
2 cans (4 oz each) Fire Roasted Diced Green Chiles
2 cans (4.25 oz each) Chopped Black Olives
1 tub (8 oz) of Whipped Cream Cheese at room temperature
2 Packages (4 cups total) Finely Shredded Mexican Cheeses
1 Bunch Green Onions
4 Medium Tomatoes

PREP (60 minutes)
Core, quarter, seed, finely dice & drain Tomatoes
Mash Refried Beans until very smooth
Finely dice Green Onions using both white and green parts
Prepare assembly area on large flat surface
Spread Cream Cheese lightly and evenly onto Lavash sheet using soft spatula
Spread Refried Beans lightly on for the next layer
Sprinkle Tomatoes, Olives, Onions and Green Chiles as if you were making pizza.
Sprinkle ingredients for even distribution – Use sparingly as one sheet will be 1/6 of total batch.
Finish by dusting the entire area with light coat of cheeses
Roll carefully from the short end of the sheets to form logs
Place logs in covered plastic container or plastic wrap
Refrigerate for at least a couple of hours. Overnight is fine 

ACTION (10 minutes)
Slice carefully into one inch thick pieces discarding the ends
Arrange them on their flat sides
Serve with salsa and guacamole.
Possible garnishes are Cilantro, Jalapenos, Sliced Radishes
