Baked Ziti

SHOP (Serves 12 in 9 x 14 Baking Dish)
Ziti Pasta (1 pound dry)
1 jar Marinara Sauce (RAO’s suggested)
Smoked Mozzarella Cheese (about 8 ounces)
Pecorino Romano Cheese (about 6 ounces)
Ricotta Cheese (15 ounces)
Parmesan Cheese (about 6 ounces)
1 Egg Yolk
Freshly ground Nutmeg (generous pinch)
Fresh Flat Leaf Parsley (good handful)

PREP (20 minutes)
Pre Heat Over to 425
Bring large pot of water to boil then add Salt
Boil Ziti per instructions on package
Cut Mozzarella into small cubes (1/2 inch square)
Grate Pecorino Romano (Reserving one cup)
Separate Egg Yolk and Finely chop Parsley
Mix Ricotta, Pecorino, Parsley & Egg Yolk in a large bowl and grate Nutmeg into mixture with microplane
Warm Marinara Sauce
Combine Ziti, Mozzarella, Marinara & Cheeses

ACTION (25 minutes)
Prepare baking dish with olive oil
Transfer mixture into baking dish
Top with reserved cup of Pecorino Romano
Bake for 25 minutes until golden and bubbly
