Carl’s Killer Croni Summer Salad

SHOP (About 20 servings)
Pasta Rings (1 pound dried “O” shaped pasta
Sliced Spanish Olives (1 large jar 16 oz – drained)
Marinated Artichoke Hearts (2 large jars with oil)
Bell Peppers (1/2 of each color Red/Green/Orange)
Celery (3 large stalks finely chopped)
Green Onions (1 bunch thinly sliced)
Extra Virgin Olive Oil (Best Quality Available)
Kosher Salt and Fresh Ground Pepper

PREP (30 minutes)
Boil water in large pot and add Kosher Salt
Cook Pasta according to package instructions
Let Pasta cool then transfer with mesh strainer
Finely chop Bell Peppers
Finely chop Celery
Thinly slice Green Onions (white & green parts)
Chop Artichoke Hearts discarding tough leaves

ACTION (5 minutes)
In large serving bowl combine cooled Pasta, Olives, Artichokes, Onions, Bell Peppers and Celery
Add marinade from the Artichoke jars, Olive Oil, Garlic Salt, Kosher Salt and Fresh Ground Pepper to taste
