Dungeness Crab Enchiladas

SHOP (12 to 15 Servings)
Lump Crab Meat (about 1 pound)
Sweet or Yellow Onion (1)
Red Bell Pepper (1)
Green Onions (1 small bunch)
Green Enchilada Sauce (2 –14oz cans)
Soft Flour Tortillas (about 15)
Old Bay Seasoning
Sour Cream
Shredded Jack or Mexican Cheese Blend (4 cups)

PREP (20 minutes)
Finely dice Yellow Onion
Finely dice Bell Pepper
Sauté Onions and Bell Pepper in warm oil
Combine Crab, Onions, Peppers, 1 cup Cheese, and Old Bay Seasoning in medium size bowl
Coat bottom of 9 x 13 baking dish with enchilada sauce
Moisten the tortillas with a little enchilada sauce so they remain flexible
Roll crab mixture into Tortillas and place seam side down in baking dish.
Top with more shredded cheese

ACTION (5 minutes)
Bake covered at 350 degrees for about 30 minutes until cheese is bubbly.
While baking thinly slice the green onions.
Top with a dollop of Sour Cream and some sliced green onions.
